Talking about baby potatoes, who on earth does not like the Kashmiri Dum Aloo made with these cuties (that recipe on some other day).

Baby potatoes have comparatively lower glycemic index than their daddies/ mommies (I mean bigger potatoes), and also for the reason we typically eat them with their skin, they are healthier. Baby Potato Fry
Roasted baby potatoes with chili, turmeric and fennel powder.
Ingredients
- 1 lbs Baby Potato halved
- 1/2 tbsp Chili powder
- 1/4 tbsp Turmeric powder
- 1/4 tbsp Fennel powder
- 2 tbsp Oil
- Salt to taste
Instructions

Combine potato, spice powders and salt; sprinkle some water and keep aside.

Heat oil in non-stick pan and when the oil is hot, add the potatoes, mix well and cover and cook in a low flame for 5 mins.

Open the lid, stir the contents, if the potatoes are not cooked yet, sprinkle some more water and cover and cook for 5 more mins.

Open the lid and stir and cook the potatoes with lid open and fry till it gets golden brown.
Recipe Notes
- You can also use crushed black pepper (or powder) instead of chili powder, or you can use both.
- You can also use some other spice mix powders, pinch of garam masala, crushed garlic, herbs like rosemary, whatever you like…
- You can also roast this in oven. reheat oven to 400 degrees F, add oil to the potatoes masala mix and spread them in an oven safe dish, bake for about 20 mins, check for consistency and continue stirring and roasting for an additional 10 mins or so until they are crispier…
- This roasted baby potatoes can be a whole meal when eaten with salad, or can be served as an accompaniment to burgers/ sandwiches instead of the boring French fries or chips. This can also be a good finger food for parties…
- One of my friend even mentioned that he likes roasted baby potatoes as a cool movie snack (I need to try that). WATCH OUT Butter Popcorn – looks like you might have a serious contender and can lose out to our dear baby!
