Egg Crispy Podi Fry

A finger licking quick and easy recipe for an awesome Egg Crispy Podi Fry that only takes a few seconds to make (if you have hard-boiled eggs ready)

Ingredients

  • 4 Hard-boiled eggs halved
  • 1/2 tbsp Black pepper
  • 1 1/2 tbsp Cumin (Jeera) seeds
  • 1 tsp Turmeric powder
  • Salt to taste
  • 1 tbsp Oil
  • 1 sprig Curry leaves optional

Instructions

  1. In a pot, cover eggs with water by over an inch.  Cover with a lid and bring water to a boil over high heat; when the water has reached a boil, set the timer for the desired time. Boil for 6 - 7 minutes over medium-high heat for perfect hard-boiled eggs.  Peel the eggs and cut them into halves.

  2. In a small mixie (food processor), add black pepper, jeera seeds, turmeric powder and salt and grind to a coarse consistency.
  3. In a pan, add oil and when it is medium hot, add curry leaves (optional) and the masala podi and fry for a few seconds and then quickly add eggs and toss for another 30 seconds.  Make sure you do not overcook the eggs.  It takes only 30 seconds after you add the eggs to finish the cooking.

  4. Enjoy when hot.  When eaten hot, the masala podi will add a crunch to every bite!
