Egg scramble (Muttai Porial) with small onion (shallots) and green chilies is one of my all time favorites. This goes well with breakfast toast or as a side dish with rice or chapathi.
The scramble tastes the best with shallots, but you can substitute with any other type of onion. I use Indian or Thai green chilies, or jalapenos depending on what is available in the fridge, or in my backyard garden.
Sesame oil imparts a unique flavor to this simple scramble, but you can use any oil of your preference.
Not everyone can take the heat from the green chilies. In my home, I am the only person who likes green chilies on anything, so I make this dish just for myself and enjoy it alone! But trust me, the heat from the green chilies will cool down when you saute them well…

Egg Shallots Green Chili Scramble
A delicious and spicy egg scramble with just shallots and green chilies that is sure to fire up your taste buds!
Ingredients
- 8 Eggs
- 1 cup Shallots chopped
- 8 Green chilies chopped
- 3 tbsp Sesame oil
- Salt to taste
Instructions

Heat oil in a pan and when it is hot, add the chopped shallots and green chilies, salt to taste and saute till golden brown.

In a bowl, whisk eggs along with some salt and add it to the pan and mix gently until it breaks down to scramble consistency. You can also make it into an omelette by not stirring too much.
