Suran Roast

Happy to share with you all one of the priced recipes from my kitchen – Suran Roast.

This dish goes well with anything.  We even eat this as a snack before even it gets to be enjoyed with any meal.

My wife (and my son too) loves this Suran Roast as a side dish to the Mint Chutney Rice, recipe is available in this site.

Suran Roast

A mouth watering dish from Senthil's Kitchen, a must try!

Ingredients

  • 1 lbs Suran thin slices
  • 2 tbsp Sambar powder
  • 1 tsp Turmeric powder
  • 1 tsp Fennel powder
  • Salt to taste
  • 4 tbsp Oil

Sambar powder substitute

  • 1 tbsp Chili powder
  • 1 tbsp Coriander powder

Instructions

  1. Boil suran slices in hot water (with some salt) in a pot for about 5 mins or so until it gets slightly softer and then drain the water.  You can avoid boiling the suran and instead cook them directly but I have found that if you boil and drain the water, the itchiness that is generally present in suran is gone/ or gets reduced to a greater extent.

  2. Add sambar powder (or sambar powder substitute), turmeric powder, fennel powder and salt to the boiled suran slices and toss/ mix well.

  3. Slow roast the suran slices in a pan for about 5 to 10 mins by adding liberal amount of oil in the beginning and towards the middle of the frying process.

  4. Turn the pieces so that both sides get evenly roasted to golden brown color.

  5. Enjoy with your favorite dish or as a snack!
