Shrimp Dry Fry

I concocted this awesome shrimp dry fry recipe few months back using “Onion Thalippu Vadagam” and it has become a huge hit with all Senthil’s Kitchen fans!

I will post a separate blog on the Onion Thalippu Vadagam soon.  My Mother-in-Law made a fresh batch of vadagam and I got it when my in-laws arrived here last weekend.

Veggie Twist – Mushroom Dry Fry

I do not want to disappoint my vegetarian fans on those days I post non-veg recipes.  You can substitute mushrooms instead of shrimp and you will get the best tasting Mushroom Dry Fry using this recipe!  Better yet, you can split the masala into half before adding shrimp and make both Shrimp and Mushroom Dry Fry separately if some family members are vegetarian and some are non-vegetarian!

Shrimp Dry Fry

An awesome and addictive Shrimp Dry Fry made with Onion Thalippu Vadagam and spices!

Ingredients

  • 1 lbs Shrimp (small size) deveined

For seasoning

  • 3 tbsp Onion thalippu vadagam optional
  • 1/4 tbsp Methi seeds
  • 2 Red chilies broken
  • 2 sprig Curry leaves
  • 1/4 tbsp Fennel powder
  • 3 tbsp Oil

Other ingredients

  • 1/4 cup Shallots/ onion chopped
  • 2 Green chilies chopped
  • 1 tbsp Ginger/ garlic paste
  • 1 Tomato chopped
  • 3 tbsp Coconut paste
  • 1/2 tbsp Chili powder
  • 1/2 tbsp Coriander powder
  • 1 tsp Turmeric powder
  • 1 tsp Black pepper powder
  • 1 tsp Jeera powder
  • Salt to taste

For garnishing

  • 1/2 tbsp Lime juice
  • 2 tbsp Coriander leaves

Instructions

  1. I prefer small wild caught shrimp/ prawns for this recipe.  Clean and devein the shrimp and keep them separate.

  2. In a non-stick pan, heat 2 tbsp. oil, and when it is hot, add Onion Thalippu Vadagam (if available) and fry till it is slightly browned.

  3. If vadagam is not available, proceed with other ingredients - methi seeds, red chilies, curry leaves, fennel powder, chopped onion/ green chilies, fry till browned, add ginger/ garlic paste, sautee till raw smell goes away, then add one finely chopped tomatoes and fry until it fully softens.

  4. Now add chili powder, coriander powder, turmeric powder, black pepper/ jeera powder, coconut paste, salt and mix well and fry for a minute

  5. Add the shrimp and mix all ingredients well and continue roasting (turning every now and then) for 2 to 3 minutes in medium high heat. When it is almost done, add little oil and continue roasting till it gets the dry consistency/ golden brown color.

  6. Squeeze some lime juice and garnish with coriander leaves.


Recipe Notes

  • There is absolutely no need to add any water in this dish.
  • Shrimp cooks very fast, you have to cook the masala very well and then finally add shrimp and finish the cooking process in less than 5 mins after adding shrimp.
