Guacamole

Guacamole (avocado salad/ dip) is one of those dishes my high schooler son make it for himself whenever he needs an afterschool fix.

Avocados (also known as butter fruit or alligator pear) are native to South Central Mexico and are nutrient powerhouse. They are always on our weekly grocery list (like milk), and patiently sit on the kitchen countertop waiting to perfectly ripen, and once they are, transform into a tasty and healthy avatar – the guacamole and enjoyed with some multigrain tortilla or pita chips from the pantry, or simply added to a sandwich.

When making the guacamole dip, mostly we use the basic ingredients like the chopped onion, tomatoes, crushed garlic, lime juice and crushed black pepper. Sometimes, I add chopped jalapenos and coriander leaves too. Few years ago when we visited San Francisco, we dined at the Mango’s Taqueria & Cantina Mexican restaurant at Pier 39 where they served their amazing guacamole version topped with chopped fresh mango fruit chunks; I make that version too sometimes.

Instructions

  1. Wash, cut, deseed and scoop out the flesh from the avocados and add them to a bowl.
