In today’s blog, I will share a simple yet delicious recipe for golden or yellow beetroot porial made with the rare beetroot and its stalks and leaves. My wife got these beauties from the grocery store yesterday and I cooked them for dinner last night.
Golden Beetroot Porial
A healthy, flavorful and earthy dish made using golden beet and its stalk and leaves and topped with freshly grated coconut.
Ingredients
- 1 lb Golden beet with stalks and leaves
- 1/4 cup Coconut grated
- Salt to taste
For tadka
- 1/4 tbsp Mustard seeds
- 1/4 tbsp Urad dal
- 1 Red chili broken
- 1 sprig Curry leaves
- 1/4 cup Onion chopped
- 1 Green chili chopped
- 1 tbsp OIl
Instructions

Wash and clean the golden beets, peel and cut them into small pieces. Chop the stalks and leaves and keep them in a separate bowl.

Do the tadka with the ingredients listed. Add the chopped beets, sprinkle some water, salt to taste, mix well and cover and cook for 5 mins.

Add the chopped stalk and leaves to the beets, mix well and cover and cook for another 3 mins or so.

Garnish with freshly grated coconut.
