Garlic Potato Fry

You might have noticed by now that most of my recipes are very simple to follow, and here is another star recipe from that category that uses very few ingredients, still produces great taste.  Yes we will talk about my “Garlic Potato Fry” recipe today.

If you like garlic, and potatoes (like me), then this recipe is for you!  This recipe has been created by me to satisfy my incessant garlic craving 😋.

This dish is best enjoyed with dal, sambar, rasam or plain yogurt rice.

Garlic Potato Fry

Ingredients

  • 1 lbs Potato boiled, peeled, cubed
  • 20 cloves Garlic chopped
  • 1/2 tbsp Chili powder
  • 1 tsp Turmeric powder
  • 1 tsp Fennel powder optional
  • Salt to taste
  • 3 tbsp Oil

Instructions

  1. Boil 4 or 5 potatoes and peel the skin and cut into small pieces.  This recipe will taste heavenly when you make with baby potatoes. Just boil baby potatoes, peel skin and follow rest of the recipe.

  2. Mix chopped garlic, cut potatoes, chili powder, turmeric powder, fennel powder (optional) and salt to taste.

  3. Take a wide non-stick pan, pour 2 tbsp oil and when hot, add the potato/ garlic mix and keep frying (in medium heat) until golden brown turning every now and then.  Garlic pieces turn crispy along with the potatoes but make sure not to burn the garlic.  If garlic is burnt, it turns bitter and can spoil the dish!

  4. Add a little oil towards the end and finish roasting the Garlic Potato fry to desired crispiness.

  5. Enjoy the dish with hot rice, sambar, dal, rasam or yogurt rice.  I sometimes enjoy this as snack as well.

Recipe Notes

I pressure cook potatoes along with the dal to cut short time.  I feel the texture of the cooked potatoes is best when cooked along with dal in the pressure cooker.
