Ganesh’s World’s Best Chicken Curry (GWBCC) recipe is from my dear friend Ganesh (or Mr.G as many knows). Ganesh claims his chicken curry is the best in the world. I have to admit that I was a bit skeptical in the beginning hearing his claims, but after tasting his dish for the first time, had to eventually change my mind and accept (sincerely) his claims as true!
I cooked the GWBCC in my kitchen recently and it came out so good (OK, I agree, it came out very close to his preparation, nothing can beat his preparation!!!). I requested Ganesh if I can publish his recipe in my blog (with his permission), and he was kind enough to agree. Of course world class recipes are supposed to be shared with the whole world right, Ganesh – many thanks again for sharing your recipe in my blog!
It is very interesting to note that GWBCC recipe only contains a bare minimum of garam masala items, but still tastes so awesome! This dish goes very well with white rice, biryani, chapathi, idli, dosa etc.

Ganesh’s World's Best Chicken Curry (GWBCC)
Enjoy the world's best chicken curry recipe from my dear friend Ganesh (Mr.G) !!!
Ingredients
- 3 lbs Young organic/ country chicken small pieces
- 2 Onions chopped
- 2 Tomatoes chopped
- 2 tbsp Ginger/ Garlic paste
- 1 cup Coconut milk or coconut cream
- 3 tbsp Oil
- Salt to taste
To make marinade paste
- 1 cup Cilantro leaves
- 1 cup Mint leaves
- 1 cup Curry leaves
- 10 Green chiles to taste
To make GWBCC masala powder
- 1 tbsp Mustard seeds
- 2 tbsp Coriander seeds
- 10 Red chilies to taste
Instructions

Herbs/ Green Chilies Marinade: Make the marinade paste with the ingredients listed under "marinade" section.

Marinate chicken with this herbs/ chilies paste for 15-20 mins.

GWBCC Masala Powder: dry roast mustard seeds, red chilies and coriander seeds and cool and grind into a fine powder. Per Ganesh, this is the main ingredient in his dish, so make sure you dry roast properly without the ingredients getting burnt.

Heat oil in a pan and fry onions first for about 5 mins and then add ginger/ garlic paste and fry till the raw smells goes away. Add chopped tomatoes and fry till it is fully mashed up and sautéed well.

Add marinated chicken, salt to taste, mix the ingredients well and cover and let the chicken cook for 15 mins or so.

Add coconut milk/ or coconut cream to chicken, mix well and continue cooking for another 10 mins with lid covered. Fresh coconut milk will be the best choice but you can substitute with canned coconut cream if you cannot prepare fresh coconut milk.

Add the freshly prepared special and fragrant GWBCC masala powder to the chicken curry, mix and cook for 5 mins and enjoy the tastiest Ganesh’s World’s Best Chicken Curry (GWBCC)!
Recipe Notes
- If you are using Country Chicken, make sure you get young one as older chicken tends to be chewy. Cooking time may be longer for country chicken when compared to regular chicken. No need to pressure cook country chicken, you can cook in the regular pan itself, you might need some extra time, that's all!.
- In Ganesh’s own words: “When you add coconut milk/ cream, the curry color will change from green to white, and when you add my masala powder towards the end, it will change from white to brown/ red”.
- Veggi Twist: Vegetarians/ Eggetarians - you can use this recipe and cook awesome mixed vegetable/ mushroom/ choya chunks/ paneer/ egg (boiled) curries. Just name the dish accordingly (GWB"X"C) !!!
